That’s the idea behind the new, veggie-packed broccoli latte, which is taking over cafes in Melbourne, Australia.

It began with a scientific experiment: In a recent effort to reduce food waste, Australian researchers pulverized ugly broccoli — which grocery stores would have otherwise tossed out — into an edible powder.

“Research shows the average Australian is still not eating the recommended daily intake of vegetables a day, and options such as broccoli powder will help address this,” John Lloyd, the chief executive of the agency that developed the powder, explains in a press release.

So Lloyd’s team turned it over to Melbourne baristas, who have stirred it into lattes and other elixirs.

Reviews were mixed, said Melbourne’s Peck Cafe owner Sam Peck to TheUrbanList.com.

“The easiest way to describe the taste is to imagine taking a big bite out of a broccoli,” he said. “Now imagine it in liquid form.”
