[03:25.58]This typically Guangzhou dish is one of the quickest and tastiest ways to cook beef.
[03:31.20]The ginger adds spiciness. Serve it with ham and bean sprouts soup.
[03:38.57]The ingredients: 350 grams of lean beefsteak.
[03:45.49]Quarter of a teaspoon of salt.
[03:50.61]Two teaspoons of light soy sauce.

[04:26.06]First, you put the beef in the freezing compartment of the refrigerator for twenty minutes.
[04:34.49]This will allow the meat to harden slightly for easier cutting.
[04:37.94]Then cut it into thin slices of about one and a half inches,
[04:46.90]that's three and a half centimetres long.
[04:52.21]Put the beef slices into a bowl. And add the salt, soy sauce, wine, sesame oil, and corn flour, and mix well.
[05:05.55]Let the slices soak for about fifteen minutes.
[05:13.39]Meanwhile, finely shred the ginger slice and set it aside.
[05:23.03]Heat a wok or large flying pan and add the oil.
[05:31.18]When it is very hot, stirfry the beef for about two minutes.
[05:40.48]When all the beef is cooked, remove it, wipe the wok or pan clean and re-heat it.
[05:48.03]Add a little oil and stirfry the ginger for a few seconds.
[05:55.68]Then add the stock or water and sugar.
[06:01.61]Quickly return the meat to the pan, and stir well.
[06:06.73]Turn the mixture onto a plate, and serve at once.
[06:15.09]D. How to Use a Camera:
[06:20.63]Julie has just arrived at Bob's house. She has bought a new camera.
[06:27.03]She wants Bob to show her how it works.
[06:30.87]Julie: You're a good photographer, Bob. Can you have a look at this camera and show me how it works?
[06:36.17]Bob: Yes, of course. It isn't difficult. But first you have to buy a film.
[06:40.93]Julie: (scornfully) I know that. Here's the film.
[06:43.80]Bob: Right. Now first you have to open the film compartment.
[06:48.45]Just press the release.
[06:50.46]Then you have to put a film cartridge in the compartment.
[06:54.35]Close it carefully.
[06:56.76]After that you have to push the lever until you see number 1 in the counter window.
[07:02.64]And then all you have to do is this: look through the viewfinder and press the button. It's very easy.
[07:10.45]Julie: Thank you, Bob. Let's try it. I'm going to take your photograph, so say 'cheese'.
[07:21.13]E. Monologue:
[07:25.96]Yes, I agree. Lovely breakfast.
[07:28.86]Very nice. Excellent coffee, especially, don't you think?
[07:32.13]Anyway, as I was telling you, it happens to me every time I go to a new place:
[07:36.02]I always end up paying twice or three times as much as I should for the first ride.
[07:39.70]But last night was the worst ever.
[07:41.69]The train got in at about eleven, so I felt lucky to get one---though it looked a bit old and battered.
[07:47.12]But he was so polite---and you don't get much of that these days: "Let me take your bags,"he says.
[07:54.49]"No trouble," he says. "It's a hot, " sticky night," he says,
[07:57.99]"but don't worry, madam, it's air-conditioned,'--and it was, surprisingly-- 'just relax and I'Il get you there in no time.'
[08:06.09]So we went for miles down this road and that road and he pointed out all sorts of buildings and other sights
[08:12.75]that he said I'd appreciate when I could see them properly in the morning.
[08:15.80]And he told me that though this was one of the few cities in the world where a woman could go at that time of night on her own
[08:19.10]and nothing to fear, even so, it was a good thing I'd taken a registered vehicle, because you never knew, did you?
[08:27.51]Though I couldn't see any special registration number of anything,
[08:30.56]and I didn't think to make a note of his licence plate---and it wouldn't have made any difference,
[08:35.40]I don't suppose. So here I am. And as you can see, if you look out of the window, that's the station!
[08:40.99]Just across the road!
[08:42.21]Anyway. Well, it's a lovely hotel, isn't it? Are you on holiday too?
[08:53.60]Section Three:Dictation
[08:59.01]My problem is with my mother,
[09:04.21]who is now well over seventy and a widow and becoming very fragile,
[09:15.99]and she really needs my help.
[09:24.53]But where she lives, in the country,
[09:36.94]there's no work available for me--I'm a designer---
[09:44.31]and she can't come and live with me because she says she doesn't like the climate because it's too bad for her rheumatism,
[09:57.37]which is actually true--it's very cold here.
[10:05.75]And if I go and work there as something else
[10:17.85]where she lives,
[10:25.48]perhaps as a secretary,it means we have to take drastic drop in salary.
