M:I'm glad you talked me into coming to this wine tasting.
M:我很高兴今晚来参加品酒宴席。

W:Tonight is special. We are tasting champagne.
W:今晚很特别，我们品尝一下香槟吧。

M:Where's this one from?
M：这个香槟来自哪里？

W:It's from the Champagne region of France, that's where it gets its name. Only grapes grown there can make true champagne.
W:来自法国的一个地方，这就是它的名字。纯天然的葡萄酿造的。

M:I see, so this one which is called brut must have been made from grapes grown in a different region.
M:恩,这是一定是由生长在一个不同地区的低糖的葡萄制造的。

W:That's right. The Champagne region has a cool climate, which has an effect on the wine making process.
W：是，生产这个香槟的地方一定有一个凉爽的气候，它影响着整个酿造的过程。

M:What's this one, Dom Perignon. Didn't a man named Dom Perignon invent champagne?
M:这个是什么？名叫Dom Perignon发明了香槟酒？

W:No, he didn't invent it, but we owe a lot to him for improving it. Pierre Perignon was a Benedictine monk who, in 1688, was appointed treasurer at the Abbey of Hautvillers.
W：不是他发明的，但是他改进了。皮埃尔·培里侬是本笃会修道士，1968年被任命为威斯敏斯特大教堂的财务主管。

M:So, his job was the management of the cellars and wine making. But why does champagne have bubbles? You said something about climate.
