具有中国特色且被外国人接受的菜名,使用地方语言拼写或音译拼写,如豆腐To-fu。中文菜肴名称难以体现其做法及主配料的,使用汉语拼音,并在其后标注英文注释。如佛跳墙Fotiaoqiang(Steamed Abalone with Shark's Fin and Fish Maw);锅贴Guotie(Pan-fried Dumpling)。
